Banana and Walnut Loaf (no added sugar)



Prepare a Sugar Free Solutions Cinnamon and Spice Muffin mix as per instructions. Then add to mix
1 Large mashed Banana
100g walnuts. (I leave the walnuts chunky – but you can chop them if required)

Prepare a loaf pan.
Gently stir through Banana and walnuts and pour batter into pan. Bake in a moderate oven (170ºC Fan
Forced) for approx. 45-50 minutes or until top springs back when lightly touched in centre – double
check with an inserted skewer as with the addition of the fruit this mix is quite dense.
If cooked, skewer will come out clean.
Allow to cool in pan 10-15 minutes then cool completely on a wire rack.

Can be eaten as is or serve with butter if desired! Great for Lunch boxes!
Really yum toasted!
